This Roasted Green Beans with Bacon and Onions recipe came about through trial and error. Mostly just plain yummy! We love our bacon and made it into this wonderful dish and we never looked back. It stays in it and if you don't want the meat you can leave it out.

Ingredients

  • 1 lbs fresh green beans
  • 1/2 package of bacon
  • 1 onion
  • 1 tsp. Garlic Salt
  • 1/2 tsp. ground pepper

Cooking time 45 minutes

Prep time 30 minutes.

Preheat the oven to 475 degrees.

Start preheating your oven to 475. First thing is to chop up the bacon into about 1/2" size and put them into a hot pan. We use cast iron pans so it can be put into the Big Green Egg BBQ. You can use any pan that will go into the oven and not get harmed. You could use a sheet pan if that makes you more comfortable. This might be more difficult to stir in because the lip hight is not large like you pans.

Then we cut up the onion into about 1/2" pieces and add them to the bacon. Slightly brown them all and set them aside.

We use sweet onion and add it to the bacon after it has browned just a little bit.

While the bacon and onions are browning start cutting up your green beans unless you like to use the whole. That will make it harder to eat. I cut them into aprox. 1" pieces.  Mix the green beans in a bowl with Bob's veggie spice mix to your tastes then add to your pan like the picture above.

We leave the bacon and onions on the bottom to cook more thoroughly. After 20 minutes in the oven you stir them up and cook for another 20 to 25 minutes.

Enjoy the salty vegetables. If you don't want bacon you can lightly brown the onions and continue as the rest of the recipe.

All done, enjoy. This is an awesome side dish with many of my other recipes.
